  1. Set the oven to 350° F. Coat the bottom and sides of a 9×5-inch loaf pan with cooking spray. Place a piece of parchment paper across the bottom and sides of the pan. 

  2. In a large glass bowl, mix the melted butter with the honey and mashed banana until they're well mixed. Stir in the eggs.

    Next, add the baking soda, salt, cinnamon, and vanilla extract to the mixture. Stir until everything is thoroughly combined. 

  3. In a separate bowl, sift in the flour and use a rubber spatula to gently fold it into the batter until it's just mixed. The goal is to make sure all the flour is evenly distributed in the batter, but avoid over-mixing.

  4. Pour the batter into the prepared loaf pan. Bake for 55-65 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
